🛒 Dough Ingredients
🥄250 g flour
🥄150 g melted butter
🥄150 g brown sugar
🥄60 g sugar
🥄2 eggs (size M), at room temperature
🥄3 ripe, mashed bananas (approx. 260 g)
🥄10 g vanilla extract
🥄8 g baking powder (approx. 1.5 tsp)
🥄8 g baking soda (approx. 1 tsp)
🥄5 g salt (approx. 1 level tsp)
🥄2 tbsp cinnamon (approx. 8 g)
🥣 Caramel
🥄 100 g butter
🥄 100 g brown sugar
🥄 60 ml cream (at room temperature)
🥣 Frosting
🥄 140 g powdered sugar
🥄 230 g cream cheese
🥄 1 tsp vanilla extract
🥄 1 tbsp heavy cream
🥣 Preparing the Banana Bread Base
➡️ Mix the batter ingredients together.
➡️ Lightly grease a baking pan and dust it with ground nuts.
➡️ Pour in the batter.
🔥 Preheat the oven to 180°C (356°F) using top and bottom heat.
⏰ Bake on the middle rack for approximately 50–60 minutes (you may want to cover it with parchment paper after 20–30 minutes).
➡️ Perform a toothpick test; the toothpick should come out clean (no batter sticking to it).
➡️ Let it cool briefly in the pan, then carefully invert it onto a wire rack and allow it to cool completely.
🥣 Preparing the Frosting
➡️ Mix the frosting ingredients until creamy—start by adding only 1 tablespoon of cream, then add a second tablespoon if needed.
➡️ If the mixture is too runny, stir in 2 teaspoons of a cream stabilizer (such as „San-apart“); it will firm up further once chilled in the refrigerator.
➡️ Place a cake ring (baking frame) around the base and spread the frosting over the top.
🥣 Preparing the Caramel
➡️ Melt the sugar in a pan until it turns brown.
➡️ Stir in the butter until the mixture is relatively uniform.
➡️ Stir in the cream until the mixture is smooth and creamy.
➡️ Let it cool slightly, then pour it over the frosting and swirl it in using the handle of a spoon.
➡️ Chill briefly.
Enjoy baking!
